Inside the Kit: Three Distinct Expressions of Brazilian Specialty Coffee
Honey Roasted Single-Origin - Sítio Alto Santa Joana, Espírito Santo (250g)
This expressive specialty coffee from producer Waldir Manske captures the elegance of Yellow Caturra grown at 1,100 meters in Afonso Cláudio. The Honey (pulped natural) process preserves remarkable sweetness, resulting in a velvety body and a rounded, medium acidity. On the nose and palate, look for cane molasses, drizzle-like honey, and a burst of raspberry that unfolds as the cup cools. With an SCA score above 86, it’s a confident, contemplative brew that shines as a syrupy espresso or a layered filter cup.

Fermented and natural processes bring together comforting sweetness and subtle fruit. Expect chocolate, red fruits, milk chocolate, caramel, apple pie, cocoa, raw sugar (rapadura), and a gentle nuttiness. Craftsmanship, Traceability, and a Lighter Footprint
Every bag in this set is traceable to producers who practice meticulous selection at origin. From the pulped natural Honey lot to carefully managed fermentations, each coffee reflects intentional processing and the microclimates of Espírito Santo and Minas Gerais. Black Tucano Coffee Roasters roasts in small batches to honor the inherent character of each lot, dialing roast profiles for sweetness, definition, and aromatic lift. The result is a trio that celebrates quality from farm to roastery to your cup-responsibly sourced, transparently labeled, and crafted for true flavor integrity.
Brewing Guidance for Your Best Cup
Whether you’re pulling a tight espresso or preparing a slow morning pour-over, these coffees reward precision and curiosity. Start with fresh, filtered water and a consistent grind. Then adjust extraction to emphasize the attributes you love-chocolate depth in the blend, velvety sweetness in the Honey, or the kaleidoscopic fruit of the Fruity lot.
- Pour-Over (V60/Kalita): 20 g coffee to 320 g water (1:16). Bloom 30–40 seconds, finish around 2:45–3:15. Aim for 200–205°F (93–96°C). The Fruity shines here with sparkling red-berry aromatics.
- Espresso: 18 g in, 36–40 g out in 26–30 seconds as a starting point. The Premium Blend delivers a plush, milk-friendly shot; the Honey yields a syrupy, molasses-toned ristretto.
- French Press: 30 g coffee to 500 g water. Steep 4 minutes, stir, settle, then plunge. Expect a rounded, cocoa-laced cup from the blend and a silky texture from the Honey.
- Traditional Coffee Makers: Both the Premium Blend and Fruity lots are dialed to perform beautifully in classic brewers-think balanced sweetness, aromatic lift, and a clean finish.
The Sensory Arc
Open the bags and you’ll meet a spectrum of aromatics: brown sugar and cocoa from the blend, heady honeycomb from the Honey, and wild berry jelly from the Fruity. In the cup, sweetness leads-molasses depth, caramel tones, and ripe red fruit-supported by tactile richness, from velvety to medium-full. The finish is clean and persistent, encouraging that next sip and revealing new layers as the cup cools.
